While kale's time in the "superfood" limelight has faded somewhat, we are still all about this beautiful and hearty leafy green. Enjoy cooked or raw.
Store kale in a plastic bag or plastic/glass container in the fridge for a week or more.
To prepare kale for raw eating, we highly recommend the following method: strip the greens away from the stem (save for soup stocks or compost) and chop or tear into bite-size pieces. In a bowl, drizzle olive oil and lemon juice or your favorite vinegar over the leaves. Massage the leaves for a few minutes until they become tender. Now it's ready for dressing or to be enjoyed as-is!
Kale can stand up to just about any cooking method, including braising, baking (as in kale chips), or being stewed into soups.
