This other-wordly looking veggie has a fresh licorice-esque flavor. Enjoy not only the bulb but the green fronds (leaves) as well.
Keep fennel in a plastic bag in the fridge for 3-6 weeks.
To enjoy the white bulb of the fennel plant, shave or thinly slice and drizzle with olive oil, lemon juice, and sea salt. You can add thinly sliced raw fennel to any salad or slaw, or use the slices for dipping. Roasting fennel is also a fantastic idea, bringing out its natural sweetness. Use the fronds as a garnish, and save the stems for making soup stock.
