We grow a variety of oyster mushrooms. While they each have distinct colors, textures, and flavors, all oyster mushrooms have a classic umami flavor with seafood undertones. Unlike shiitake or portobello mushrooms, oyster mushrooms' stems are generally tender and delicious!
Keep mushrooms in a plastic bag or plastic/glass container in the fridge. Ideally, the mushrooms would be kept in a vented container (to hold in most of the moisture while allowing the mushrooms to respire). If you don't have a vented container, we recommend opening the bag or container to allow for some air exchange. Stored properly, oyster mushrooms will last for 7-10 days in the fridge.
Oyster mushrooms are superior in flavor to the classic button mushroom and versatile enough to be substituted into most recipes calling for mushrooms. The key to cooking mushrooms is cooking them low and slow to ensure that the chitin in their cell wall is fully broken down. The chitin is difficult to digest and longer cooking increases the availability of the nutrients in mushrooms, all while drawing out flavor!
