The sweet corn we know and love (and enjoy as a vegetable) is the early harvest of the mature corn plant (used as a grain).
Eat ears of fresh sweet corn within 3-5 days of harvest. Or slice the kernels off the cob, blanch them, and freeze for up to a year.
The first bite of fresh, raw sweet corn is hard to beat. Add the juicy kernels to salads, soups, or just about any entree that could use a little sweet crunch. If you're a grill-master, enjoy corn-on-the-cob or turn leftovers into grilled corn chowder.
