Sweet potatoes are a naturally sweet and creamy root crop that, while best suited for growing in the South, grows quite well in Northern Indiana. In Indiana, sweet potatoes are harvested in the late fall and available as storage crops in the winter and spring.
Do not put your sweet potatoes in the fridge! Storing them in the fridge will result in a hard center and an unpleasant taste. Leave sweet potatoes on the counter or in a cabinet with good air flow. They will last for several weeks if not longer.
We love sweet potatoes mashed, smashed, hashed, roasted, baked, fried, steamed...just about any way other than raw. Our most common use is the baked potato bar with beans, ground meat, and all the Mexican-inspired toppings imaginable.
