The Tokyo Turnip is one of the best-kept secrets in the vegetable world! These sweet, buttery turnips with a creamy texture are great eaten raw or cooked like a traditional turnip.
Keep turnips in a plastic bag or covered plastic/glass container in the refrigerator. Stored without the greens, the turnip roots will last for weeks. If the greens are still attached when you receive the turnips, remove the greens and compost them or store them separately to eat later (in a plastic bag or covered plastic/glass container). Once removed from the roots, the greens will last for about one week in the fridge.
When the turnips are picked small, we love eating raw, thinly sliced Tokyo Turnips. A little salt and butter makes for a great snack. With bigger turnips, dicing the turnips and then roasting them until they're tender and caramelized is a great option. Other preparation options include sautéing, braising, and pickling.
