We wait all fall, winter, and spring for this delight of summertime. When in season, be sure to enjoy copious amounts raw, perhaps with olive oil, salt, pepper, and a soft cheese. But the recipes for cooking with tomatoes also abound!
Keep in a cool place out of direct sunlight for up to 5 days. Do not refrigerate.
Put thick slices of raw tomato on sandwiches. Give them a rough chop and saute with olive oil and garlic until they've thickened into a sauce or a base for shakshuka. Make your own salsas and pasta sauces. And be sure to make at least one Caprese salad before season's end!
